Jesus Christ wasn't a fisherman. But a couple of his disciples were. In Jesus's day, son's followed after their father's trade. And Jesus's Father, Joseph was a carpenter. So Jesus was a carpenter. He probably didn't do much carpentry while he was going around preaching and healing.
There is probably no definitive answer as to why someone adopted the fish symbol in Christianity, but it has been used as a religious symbol for millennia.
Natural reasons could be the reference to the disciples as fishers of men, or a play on words, using the sign said to have been placed over the cross, "IC(H)T(H)US", which coincidentally spells fish in Greek. Of course, these reasons, even if applicable, do not explain why exactly this ancient fish symbol began to be used.
The fish symbol was formerly used quite widely as a sacred symbol of the female vulva. The fish Goddess, Aphrodite Salacia, was worshipped by her followers on her sacred day, Friday, when they ate fish and engaging in orgies. It may be that, just as the early Christians adopted pagan feast days in order to divert worship away from pagan deities, so they adopted the fish symbol and ate fish on Fridays, but of course did not engage in orgies.
Fishermen have used the same method for years at Jesus time, they used fishing nets and boats, they also went out in the night as their catch of fish would be more then in the day.
