Alfredo pasta, a fettuccine covered with a rich and creamy sauce made of heavy cream, butter, cheese (usually Parmesan), nutmeg and black pepper, was created by Alfredo, an Italian chef, restaurateur and innkeeper. At his restaurant Alfredo alla Scrofa in Rome, he famously served his Alfredo pasta dish, to VIP visitors, with solid gold forks given to him by the movie stars by Douglas Fairbanks and Mary Pickford.

Fettuccine has been eaten in Italy for centuries, but the 'Alfredo' addition to the name originates from Alfredo Di Lelio, a chef who named the dish in 1914. Adding chicken to the recipe is primarily an American innovation that did not appear until later.
