It depends which species of campylobacter you are refering to. Campylobacter jejuni is responsible for most(number) campylobacter related human disease. As the name sugests grows in the upper part of the dueodenum (jejunum), illeum and colon of several species most notably for human clinical pathology in chickens. Chickens in slaughter houses are dipped in hot water post mortem to loosen their feathers this invariably leads to the water becoming contaminated with fecal matter and so the carcase is covered in a diluted suspension of bacteria. If the food handler is not particular about washing hands and work surfaces contaimated with diluted chicken feceas or the chicken is not well cooked to kill the organisms then infection can occur with as few as 500 ingested bacteria. There have been cases of people becoming infected after drinking milk contaminated by blue tits pecking milk bottle tops left on doorsteps.

There are also C.coli and C.fetus which cause disease in humans and cattle. As well as C.rectus, C.lari, C.helveticus, C.gracilis, C.curvus, C.mucosalis, C.showae, C.upsaliensis and many others. Generally they grow in higher organisms the exact species and organ may differ.
