I prefer the Mach Bike for the extra speed boost but some people find it's too fast and they can't handle the bike well without crashing. It's purely down to your own preference so just try each bike and see which you'd prefer for most parts of your game. But you'll have to go back and change it at some points in the game, because some areas can only be accessed using a certain bike.

∙ 14y agoIt can do tricks like wheelies, bunny hops, side jumps be its not just for show! You may find on your travels little small rocks that lead to areas you can't go to if you use the bunny hop you can hop to the place you can't reach! Hold on there is more notice on your travels you can find some bridges that lead to places you can't reach if you use the side jump you can hop across the gaps to reach the areas you use to not be able to reach!

What can the mach bike do in Pokemon sapphire?
The Mach Bike is faster than the Acro Bike, and the Mach Bike allows you to go up slippery muddly slopes whereas the Acro Bike doesn't. Also, although you can ride the cycle path on an Acro, you can only set a record speed on a Mach Bike, because the Acro is much slower/easier to manouvre.
