On my Les Paul, you just pull out on the knob and it pops off. Some knobs my have a small screw on the side that needs to be loosened first, (but not all the way out or you might loose it) and it will come off.

if you're holding the guitar (as if you're playing it) its the bottom left (thats your left.) bottom right controls lead tone, top left controls rythmn volume, top right controls rythmn tone. if you put the switch in the middle, the guitar will feed off both pickups.

The plastic or metal knobs are usually just put-on so you should be able to pull them off easily.

In some cases knobs(mostly metal knobs) have a locking screw on the side so you have to unscrew them first and then pull them off.

Well, you want a nice resonating wood like Basswood or Mahogany. For the fretboard, I recommend rosewood. Buy machine heads, pickups, volume and tone knobs and a bridge. Maybe a pickup selector as well. Shape and sand the body, neck and fret board to a desired shape. Carve out a "box" on the bottom of the guitar. This where the volume and tone knobs and pickup selector's wires will go. Carve hole on top of the "box". This is where the knobs and selector will come out through the body. Then put in the bridge . Put this on top at the edge facing out. The bridge holds the strings in place. I recommend using a level. then put in the machine heads on the neck of the guitar. Make sure the machine heads' paths don't conflict. String it up. Tune it up. Play it up!
