It depends on what welding process is being used and what type of metal is being welded. When Oxy-Fuel Welding, Acetylene is the most popular. MAPP gas and Propane are also used. With the GMAW (MIG) process Argon, CO2 and Oxygen gasses, in mixtures or alone, are used. GTAW (TIG) gasses are almost always Argon and/or Helium. This is not all inclusive as new processes are being developed every day. Check with your welding material supplier for relevant info.

n - Oxygen and Acetylene are the original gasses that are used for welding/cutting. Newer mixtures are slowly replacing Acetylene as a fuel. These gasses don't always reach the temperatures attained by Acetylene. Us old-timers still prefer Acetylene.
I would say that SMAW (stick) is still the most widely used process. The GMAW (mig) process has gained a wide acceptance in construction and fabrication and may even have surpassed stick welding in many situations. Unfortunately with mig welding the machine has to be close to the welding site. Dragging a welding lead into and around fabrications is still much easier than moving a mig machine.

Underwater welding uses a special flux around the welding rod which produces gasses which form a bubble around the end of the rod ,excluding the water. It is difficult and never as strong, lacking penetration. It is only used when absolutly necessary.

There are a few commonly used welding process. The top used are shielded metal and arc welding.
On steel a mixture of Argon and CO2 usually 75% to 25%
filler materials are used to fill the gap between the two job materials during the welding process
