Assuming that the questioner is asking about an experiment in which salt is added to a vessel containing pure water and an egg lying on the bottom of the vessel until the egg floats, the choice of which salt to add depends primarily on making sure that the salt is sufficiently soluble in water to raise the density of the aqueous solution formed high enough to exceed the density of the egg.
