The answer to your question is mute. The fact that you are willing to give your time to help those in need, shows a lot about your character. It would be up to you to decide what organization you want to affiliate yourself with. Basically, any kind of volunteer work would be good. My suggestion is just do what you enjoy doing to help people. There are so many opportunities that you probably don't even think of. Do you like animals? Walk dogs at an animal shelter. Do you enjoy children? Read to kids at the library or help teach a Sunday School class at your church. These are just a few examples. My advice is to just find something you enjoy and use it to help others. Don't do something that you hate since you might come across as fake to the college. They probably want students who authentically care about others.

Are any online colleges worth going to for software Engineering?

As long as the school has a regional accreditation it would be fine. If it does not, I would look for colleges and universities that do. With a regional accreditation, you can be assured the coursework and degree you complete will be recognized by all other colleges and universities as well as employers. As long as the school has a regional accreditation it would be fine. What high school electives look good on colleges applications?

Colleges look for students who are consistent, take on leadership roles, are self-motivated, and are active in their schools and community. I would suggest that as you satisfy your A-G requirements, you do the "recommended" extras (i.e. such as: although 3 years of Math are required 4 are recommended.) Try to get internships, jobs, and/or volunteer in the areas which you are interested in (especially if declaring a major on your college application). Just remember colleges are usualy looking for good students that have goals in mind and that they're thinking about achieving them.
