Isaac and Rebekah (see Genesis chapter 25 verses 20 to 26). Their son Jacob married Rachel and she became mother to Joseph (see Genesis chapter 29 verses 21 to 30 and chapter 30 verses 22 to 24).

We don't know. The genealogies in Matthew and Luke differ. They don't even agree on who Joseph's father was. Luke has Heli son of Matthat; Matthew has Jacob son of Matthan.

There are several theories attempting to reconcile the discrepancy.

One popular theory is that one of them is actually the genealogy of Mary. The more widely held opinion is that this is Luke's, in which case Heli is Joseph's father-in-law and Jacob is his biological father. A minority view holds that Matthew's version is Mary's ancestry, and the Aramaic word-root GBR (which means something like "strength" and is used to refer to the head of a household in several different contexts) was mistranslated into Greek as "husband" when "father" was actually meant... in other words, that Mary married someone with the same name as her father, and the two of them were then misidentified as the same individual. If this is the case, then Joseph's father is Heli, and his father-in-law is (a different) Joseph, son of Jacob.

Another theory involves Levirite marriage, in which someone's legal father is the (deceased) brother of their biological father. In this scenario either Heli or Jacob would be Joseph's biological father, and the other one his legalfather. This doesn't explain the other divergences, though... while the two names given for Joseph's grandfather (Matthan and Matthat) are similar enough that they might refer to the same person, the fact that Matthan's father is given as Eleazar and Matthat's is given as Levi is problematic and requires us to assume that something more is at work here. Another issue is that the lineages diverge after David (Matthew traces it through Solomon, Luke through Nathan) though they briefly appear to reconverge at Zerubbabel son of Shealtiel (it's possible that these are actually different people with similar names.... interpolating from known dates implies that Luke's Shealtiel was apparently born about the same time the Zerubbabel mentioned in the Old Testament was leading the Jews back from Babylon, and may have been named after the father of the famous hero, to whom he would have been distantly related through his multi-great grandfather David).

The simplest explanation is that either Matthew or Luke (or possibly both) was making it up, or (in a more charitable view) simply relying on inaccurate information given to them by others. After all, how many people could correctly name even their closest friend's grandfather, and if able to do so could recall whether he was on the paternal or maternal side?

In no case do we have any definitive answers, or really even clues, as to who Joseph's mother was. Africanus writing in the 3rd century identifies his grandmother as a woman named Estha, though how reliable a document written at least 300 years after the fact may be is open to question.
