Technically there were only 4 Beatles that became famous. John Lennon, Paul McCartney, George Harrison, and Ringo Starr. However Stuart Sutcliffe and Pete Best also played in the band for a little while.

ThEre are mainly three people known as the 'fifth Beatle'. They are Brian Epstein, The Beatles' manager until his death in 1967, Pete Best, who was the Beatles/Quarrymen drummer before Ringo Starr, and Stuart Sutcliffe, who was in the band before dropping out to go to art school.

That title is informal, meaning that there was no fifth Beatle, but the title was thrown here and there. Some people regard the late Stuart Sutcliffe as the fifth Beatle during the Hamburg year but he left the 'Silver Beatles' during their Hamburg endeavours to live with Astrid, his German girlfriend, in Hamburg. He died of a brain bleed.

Another person to be deemed the 'fifth Beatle' was the manager Brian Epstein and also guitarist Eric Clapton that played the guitar on 'While My Guitar Gently Weeps'. Billy Preston worked with The Beatles on the whole Let It Be album and played in most of their iconic tracks on this album could also be considered the fifth Beatle. Also, the Beatle's producer George Martin is sometimes considered the fifth Beatle.
