It is complicated. There are two popular versions of the song. The latin version is actually the Catholic Hail Mary set to music of Franz Schubert's "Ellens dritter Gesang" written in 1825. Schubert's original song, sung in German, was actually Sir Walter Scott's poem "The Lady of the Lake" translated into German by Adam Storck and set to the melody that Schubert wrote for it.

So if it sounds like Latin, you could be listening to a composition by Schubert OR by Charles Gounod written in 1859 and based on Johann Sebastian Bach's first prelude from the Well Tempered Clavier. Either way, the words are as follows:

There are several versions of this song to the Virgin Mary but the best known are those by Schubert and the one by Bach/Gounod. There is also a beautil version, Ave Maria, dolce Maria which is less well known but quite exquisite, by Vittoriano Benvenuti. The Bach/Gounod version is based on the first prelude, C Major, from the first book of Bach's Well Tempered Clavier.

Later her mother Aurélie Jousset, has changed the lyrics with her own latin lyrics and proposed the title Ave Maria. I think these lyrics have nothing in common with the clerical text and for this reason the words Mater Dei and Mother od God are not used.
