Usually, what gives an apple it's color is when you pick it. If you pick the apple really soon, it will be yellow. A little bit later, green. But if you wait until it is ripe,it will be red.

Have you ever had a grape plant? Well if you have, then you would have noticed already that first the grapes grow really tiny. And when they are like that, they are really sour. Many things green are sour. The yellow type of apple does not taste rarely good. The reason for that is because it is not ready in time. Although, many people enjoy yellow apples. Red apples are almost everybody's favorite. That is when the apples are big and strong, good and ripe. My favorite though, is definitely green!!

One can explain this in terms of evolution. All plants and animals on the earth have evolved to become what they are today. Hence each aspect of a plant or animal occurring today is the result of that aspect causing that plant or animal to be more suited to its environment and more likely to produce offspring. A fruit which did not change color when it was ripe would confuse the animals which eat the fruit and therefore they would eat it when it was not yet ripe and the seeds thus liberated in their feces would not grow. Fruits which show they are ready would be preferentially eaten and their seeds dispersed at the time most suited for germination.
