Refined grains are processed grains that typically have the germ and the bran stripped out of them. This process removes upwards of 80% of the nutrition from the grain and basically leaves strarch. In contrast, a whole grain has not had the germ or bran removed and therefore provides important fibre to a diet.

Whole grains contain the entire seed; the hull, or bran, which contains fiber, the starchy part, and the kernel, or endosperm.

Refined grains take off the hull and the kernel, removing fiber, protein and many nutrients in the process.

Whole grains have more nutrients than refined grains. Whole grains have not been processed to remove the bran and germ. Refined grains remove fiber, iron, and B vitamins to make the shelf life last longer. Most refined products are enriched but do not add back the fiber.
