Mercury is a metal that accumulates in the muscle or meat of the fish, (just like humans) if the fish is high on the food chain like sharks, tuna and sword fish, they continue to eat smaller fish with mercury in it's system, faster than their body can excrete it and the amount of mercury continues to build up in their system.
It will eventually poison the fish causing sluggish movements, decrease growth, deformities, reduced appetite, decrease in size and an increase in birth defects or the complete loss of the ability to spawn.
If the source of the mercury is removed the fish will recover fairly rapidly, similar to the recovery in humans.
The biggest threat of mercury to humans is birth defects, miscarriage and possibly autism. Women who are breast feeding, pregnant or could become pregnant should have no fresh water fish and limit salt water fish to 6oz or less per week.

They do die from mercury poisoning when they have eaten enough of it to kill them but it is also kept in the flesh and organs of the fish before the fish dies, and when creatures further up the food chain eat the flesh they are also eating the mercury which will eventually do the same to them.
They are, that's why we do water changes on tanks and why filters use activated charcoal, also natural bacteria's in the tank help to break down ammonia levels. Most aquarium fish are very sensitive to ammonia levels and high levels of ammonia are among the leading causes of fish death. It can actually burn their skin when it gets to higher levels.
If the level of mercury in the fish is high enough. normally mercury is not a parot of most peoples diet. if you eat enough mercury then you will die

You can get mercury poisoning, most commonly obtained by eating dolphins (which have higher levels of mercury than some other animals). Which, as the name inplies, poisons you slowly.
