Why can' t java programs be converted into .EXEs?

The whole idea of Java is to have programs that run on multiple platforms - multiple processors, multiple operating systems. The EXE format is specific for DOS and Windows.

That being said, I must have read somewhere that it there are implementations that do convert Java to an executable format, for convenience and speed. However, this executable can then no longer run on other platforms.
