Is this iTunes icon in the dock? Grab it and drag it out of the Dock, and it will go away. Then drag the icon of the application you want to use into the Dock.
If you mean the application icon...that's fixable too, at least on a Mac. Create or get the new icon you want. Copy it. Find iTunes, which is in the Applications folder, and do Get Info--command-I. Click on the icon at the top of the info box, and Paste the new icon in. Very easy to do.
Click on the Trash basket icon to open the Trash window. Locate the iTunes icon and click on it and drag it back into the Applications folder.
If you have a video on your computer that you want to load into iTunes you can simply drag the video's icon into the iTunes icon in the dock.
If the movie is on your Mac simply click on the movie's icon and drag it into the iTunes icon in the dock and the movie will be imported into iTunes.

If you can't open iTunes, try updating it.
Go to the iTunes icon.
Right click the icon, and press delete, or 'move to trash'. But that only deletes the icon, the program is still there, I only know how to delete the program on a Windows computer, you go into 'Start.' Then in the side part there is one called 'Set Program Acess and Defaults', press this and then select 'Change and Remove programs.' There will be a list of installed programs and the option of deleting them, selct iTunes, and Remove. This will remove it permanantly. On a Mac, I don't know, but you may be able to search for your answer in 'Help.'
If it is an mp3 file (the most common type for downloaded music) you can play it in iTunes or Quicktime - you can drag the song file's icon onto the iTunes icon in the dock to load it. Try double clicking on the song file's icon and see what it opens in.
Right click the iCon an click open with... then select program from a list then click iTunes.
If the song is permanently deleted from every source you have, you will just have to pay for it again.
Clicking on the music's icon and dragging it into the iTunes window will add it to the iTunes library or select Add To Library... from the iTunes File menu.
