The air in the environment contains moisture, which the crackers would absorb if they were not kept in an airtight tin. Keeping them in a tin prevents them from being exposed to a lot of moisture (there's still a little in the tin, but not nearly as much as their would be if the crackers were kept out in the open), hence they retain their crispness.

Because they are exposed to the air, and air has water in it in the form of water vapor. In especially humid environments it happens faster, but almost anywhere, you should keep your crispy food containers closed to keep our the moisture.

Air has moisture in it. The food picks up that moisture and becomes soft. By placing the food in an air-tight tin, you have limited the amount of moisture that is available to soften the food, so it stays crispier longer.lol

Because the air contains some moisture anything left out will gain or lose moisture to equalise with air around it. Therefore crisp foods will slowly absorb moisture and become soft unless kept airtight. Conversley foods with higher moisture contents than the air will lose their moisture which is why bread, cheese, cakes etc dry out. The dryer the air the slower your cookies will soften

Crispy food left out in the open absorbs water from the air. The food in the tin would also absorb moisture, however there would be less moisture in the tin and it would retain most of it's crispness.
