Hestia, not wanting to be involved in the gods' quarrels, decided to leave Olympus to tend to her sacred hearth. She became a lesser goddess in the same ranks of Pan and Dionysus, the latter of whom later rose to the place of Olympian when Zeus chose him to take Hestia's place.

Hestia gave up her to seat to Dionysus, the god of wine. She did this so that there would not be a fight between the gods. Hestia then resided by the Olympian Hearth where she tended the fire.

Hestia did have a seat on Olympus. However, when Dionysus came along, there were thirteen Olympians, which was considered bad luck. Therefore, Hestia volunteered to step down to avoid any problems.

Well, In the Percy Jackson series Hestia is mentioned as being the last Olympian because she says "When all the other Gods and Goddess' go of to war, I am all that is left. When all else fails home and hearth is still there. I am the last Olymian." That is why she is the Last Olympian.
