Actually, 2 hours and 40 minutes was a rather short time for such a large vessel to take on enough water to sink.
because of all the air inside the boat. This air made it float for a long time until a lot more of the boat was under the water, then all the air was leaving the boat, therefore it took a long time.
My guess is that the water wasn't coming into the ship very quickly, causing the ship to displace the sea water at the same rate. This caused the gravitational force to slowly become stronger than the buoyant force, therefore causing the boat to go down slowly.

When Titanic hit the ice burg the first six were flooding (pumps kept water out of boiler room 5 for a while). As her bow began to sink the bulkheads were keeping the water out but the 5th compartment flooding meant that Titanic's bow went low enough for water to spill over the tops of the bulkheads at E deck. Once this happened Titanic sank much faster as water filled a bulkhead and spilled into the next until she finally sank.
