Because of extreme persecutions from Missiourians. Persecutions of which included Haun's Mill (extreme massaure of all Mormon in Haun's Mill even though the Prophet Joseph had warned those people frequently to drop everything and get out), destroying of homes, whippings and flayings and tar and featherings of Mormons, etc. These persecutions did not just happen in Missouri though. It happened in New York, Illinois, etc.
Consequently, the Mormon Trail was formed as hundreds of Mormons were forced to leave their homes and trek thousands of miles through all sorts of conditions until the finally reached safety in Salt Lake City, Utah.
