Tybalt wanted to start a fight at Capulet's party since he likes fighting a lot better than the eating, dancing, flirting and having a good time that was going on at the party. But Capulet wouldn't let him and told him that he was a "princox" and a "saucy boy" into the bargain. Tybalt was both frustrated and insulted, but he couldn't pick a fight with Capulet.

He didn't really ditch them at the party. He was just really distracted. He did leave with them. However, he did ditch them immediately afterwards so he could be alone with Juliet.

It would ruin the party if there was a murder. Plus, Capulet did not want Tybalt to harm Romeo because he felt that Romeo is a guest in his house and should be left alone.
