The story of the Green Knight is a classic Arthurian romance thus the story has a meaning. Sir Galahad got told by the Knight to hit him with a blow and in a year the knight will hit Sir Galahad with a blow twice as powerful. Sir Galahad in his arrogance cuts the Knight's head clean off, the knight picks up his own head and reminds Sir Galaha of what will happen in the years time. thus it is a story of not making rash choices out of arrogance.
