Because they wanted access to a Mediterranean trade route. The French needed help, so when they heard the Brits were interested, they spoke with them, and won them over.

The Crimean War was a contest between the major European powers for influence over the Territories of the declining Ottoman Empire. Great Britain and France sided together to because Russia was granted the permission to act as the Policeman of Europe to maintain the balance of power, established in the Treaty of Vienna. Both Great Britain and France did not want Russia's involvement in the Ottoman Empire. France wanted the Ottoman Empire to recognize that France was the controlling nation.
