Confucius a philosopher from East Asia around 551-478 BC emphasized the art of cooking and enjoyment of life, culinary etiquette, social sharing of food, presentation and combing tastes and textures. He established culinary standards and proper table etiquette, most of which are still standards today. The tradition of cutting food into bite size pieces during preparation and not at the table is unique to the Chinese culture, so one did not need any knives on the table.
China, Japan, Korea, and Vietnam food is usually eaten with chopsticks; but it was the Chinese who were the earliest culture some five thousand years ago. Their food cooked in pots required twigs to remove it. Overtime, as population grew - people began chopping food into smaller pieces so it would cook more quickly thus minimizing the use of wood for cooking - twigs gradually turned into chopsticks
Some people think that the great scholar Confucius, who lived from roughly 551 to 479 B.C., influenced the development of chopsticks. A vegetarian, Confucius believed knives would remind people of slaughterhouses and were too violent for use at the table.
The use of chopsticks reflected Chinese pragmatism and frugality in overcoming the difficulties of life. Famine, drought were common in ancient China; therfore food need to be shared between family members; picking only small morsels with chopsticks to accompany bowls of rice. (Fork-&-spoon would have enabled a user to take large portions - inconsiderate and selfish when food is scarce.)
The Chinese have been eating with chopsticks since about 1766 BC. They were considered more lacquerware friendly than other sharp eating utensils.
Some think that the Chinese scholar Confucius is responsible for the Chinese using chopsticks. Apparently he thought knives were too violent for use at the table.

Chinese people usually eat most of their food with chopsticks. Spoons are also used, but typically only for soup. During a typical Chinese meal, all the dishes are put on the table and everyone helps themselves to what they want with the chopsticks they use to eat. (Serving utensils are not usually used.) Chinese people encourage guests to eat by using their own chopsticks to place food in the guest's bowl. Most food is eaten from a bowl, not a plate. It is not considered rude to lift the bowl closer to your mouth, nor is it considered rude to drink soup from a bowl. For more: joongkoogjip.com
