The first problem with the question is the misnomer. The Hebrew is not Kochav David (Star of David) but Magen David (Shield of David). David was an Israelite King and a renowned warrior. The Shield of David is the emblem on the shield he brought with him into battle with Canaanite Tribes and the Philistines. It became a symbol of the protection that God gave to the Israelite Kingdom under his and Solomon's reigns. In more modern times it is seen as symbol of Jewish unity since Jews consider themselves to be descendants of the very Israelites that David protected with his Shield.

Additionally, Jews are still waiting for the Messiah to come to earth. He is to be from the line of David. Therefore, the star of David is the symbol of this hope.

The story goes that David, a great Jewish king in ancient times, was so poor in his early life that he had to use the most basic equipment when at war - including a shield made of leather stretched over a wooden frame. One of the most simple, yet strong, ways to create a wooden framework is to use two interlocking triangles - which is also called a Star of David. In time, it became known as a symbol of Judaism.

There is no such thing as a Jewish flag.

The State of Israel has Israeli national symbols such as a flag that draw from Jewish inspirations. It is very similar to how there is no such thing as a Lutheran flag, but the cross on the Swedish flag is representative of how Lutheranism is the dominant religion in that country.

The Star or Shield of David was included on the Israeli flag because it is a common Jewish civic symbol. What most people don't know is that the design was made official in 1898.
