There is a naturally occurring enzyme called polyphenol oxidase......

When fruits(Apple) vegetables(potato) crush and react with oxygen found in air and make a naturally occurring enzyme called polyphenol oxidase which causes brown or kind of yellow color on apples and potatoes and other fruits and vegetables......And that is why we should leave sliced potatoes or apples inside water because air can't go inside water....but it will remove soluble vitamins from apples and potatoes so use apples and potatoes as soon as you cut them.

The water diffuses into the cells of the fruits and vegetables, keeping them plump and crisp. You can do the same thing at home. For example, if your celery gets limp (loses water) in your refrigerator, you can put it in a sink of water for awhile and it will become crispier (though probably not as much as when you bought it).
