jackrabbits not only use them to listen for predators like coyotes, foxes, or mountain lions but also to keep themselves cooler. thick, rich blood vessels run through the jack rabbit's ears. their ears simply radiate the heat from the blood out through their ears.

The theory of evolution is that characteristics that survive in a species gave it a survival advantage at at least one point in its history as a species. One would guess that long ears would improve hearing and so serve as earlier warning of the approach of predators. Thus short-eared hares were more likely to be caught and eaten and long-eared ones survived to mate and carry one the species as well as the DNA that caused their longer ears.

Nobody really knows for sure, of course.
