The copper in their blood gives their blood a bluish tint. It is much like how iron in our blood causes our blood to be red.

Haemoglobin is a red pigment in blood that makes the blood red when it comes out into oxygen (that why when we bleed, our blood is red.) some animals do not have haemoglobin in blood, for example LOBSTERS! So this is why their blood is blue.

Lobsters have their blood blue in colour because,

The copper present in the animal's blood gives it a blue pigment colour.

In humans, when we get hurt and bleed, our blood is red, that's because, actually, our blood is blue but when it is exposed in oxygen, it turns red. Our blood also have a dark red pigment because of the hemoglobin present. In lobsters, hemoglobin is not there. therefore, the blood remains blue, and thats why, the blood in lobsters is blue!
