Why do people in poorer countries tend to be less inclined to eat vegetables even though it is easier to grow vegetables than raise animals?

This is not actually all that accurate. Animals are usually kept as tools or for milk. The milk is used to make more foods, such as hard cheeses that can be stored. The animals that are eaten tend to be hunted instead of raised. Personal animals are usually only slaughtered for ceremonial reasons, and then shared with the village at a feast. Lower income countries tend to depend more on food items such as beans and rice. My family went on a mission trip to Nicaragua, and it was beans and rice three meals a day the entire trip. That was what everyone in the village had. Countries in Africa tend to be more dependent on grains called teft and millet than rice, but the concept is the same. The meat that is used, is usually prepared in way that makes it go much farther, such as stews.
