∙ 12y agoWhen you cut through the shoot of the onion it releases an enzyme that reacts with the rest of the onion to produce a gas. When this gas combines with water, such as on or around the eye, it becomes an acid which causes eye irritation. There are a few methods that are supposed to work for reducing eye irritation. Chilling the onion in the freezer before cutting, soaking the onion in water or salt water before cutting and cutting the onion under water are some suggestions. Some people say that Chewing Gum while cutting onions helps too, though I have never tried it so I can't say it actually works. If you are in an area with a breeze, you might like to check it isn't going to blow the gases toward your face too.

∙ 12y agoCrying is caused by the chemical thiopropanal sulfoxide. This chemical is formed in onions when the cells are broken apart, and an enzyme called alliinase reacts with a alliin chemicals. Thiopropanal sulfoxide escapes into the air and causes the eye to make tears.
Thiopropanal sulfoxide does not form sulfuric acid (H2SO4) in the eye.
