Why does milk go off?
Milk contains bacteria. If kept cold, the bacteria grows more slowly. It feeds off of the sugar in milk, causing the consistency to thicken as more bacteria grow.

It's just an estimate. After working in the industry for a while, you'd get used to when the stuff goes off. Sometimes they might guess it too early or too late. A good way to check if milk is off is to smell it. If it smells like usual, then it's fine. If it smells acidy, then throw it away. It's off.
