Sugar dissappears in lemonade or any liquid because the glucose (sugar) compound is broken up by the water molecules and then the Carbon Oxygen and Hydrogen which made up the glucose (sugar) bond with the existing water. Making sugar water, or in this case lemonade! :)

They put carbonated water in lemonade because if they didn't, then it would be just pure lemon juice and not the lemonade we know and love.
