Because he is insane and he heard the beating of the old man's heart. He cannot take the sound of his crime anymore, therefore he confesses in order to try and make it go away.

He says the following, "Villains!" I shrieked, "dissemble no more! I admit the deed! --tear up the planks! here, here! --It is the beating of his hideous heart!"

Torn between whether it is guilt or because he KNOWS the detectives have found out, I still must say guilt. Because guilt was the instigator in which made him confess to the crime of murder.
