Why does the temperature gauge peg out then drop back with the thermostat in but run cold with it out on a 1993 Caravan 2.5?

The 2.5 has a few issues with thermostats, one being that the temp selection when buying a new one is often mistaken. the factory temp was usually 192* This would be fine for winter, but summer would cause a over-heat issue, and since the temp sending unit was with in a close proximity to the t-stat housing, the gauge would read hot until the cooler water from the rad flushed over it. A good rule of thumb..... Summer Radiator flush, step down the temp on the T-stat to 160*. Winter, 192* with 50/50 antifreeze and you should be set. Also check that the sending unit isn't corroded. This was the other issue with these.
