You could have a bad thermostat, just because its new doesn't mean its good, TRUST ME ON THAT, or you could possible have an air pocket in the cooling system.

Personally , if I want an engine cooling thermostat changed I just take it in and let a mechanic / technician do it and pay the bill
could happen if the thermostat is not opening, or if there's a pressure leak in the cooling system, insufficient cooling fluid, or a bad water-pump, a kink in a hose or blockage in the cooling-system. Anything that keeps the coolant from flowing in and out of the block or causes a loss of pressure. It isn't enough to just have coolant in the system, the sysem has to hold a head of steam as well. Otherwise the water will just get hot and blow out of the system.
check radiator for small leaks or cooling lines which would most definitely cause it 2 steam when running after awhile

It does overheat but it wont get it just for being on. If you have it in a cool, well ventilated place it wont overheat quickly.
If you just did some work on the cooling system and just filled the container up you have to remove the bolt on the front of the intake manifold and fill that to the top and keep burping the system by squeezing the hose and filling till it won't take any more water. It may be your thermostat or water pump if it just started happening.
Running the A/C puts added stress on the engine. It is likely that either the cooling system is in poor shape and just barely adequate to cool the engine, and with the added load of the A/C it isn't up to the task of keeping the car cool. Or the cooling fan isn't coming on to help give added airflow to compensate for the added load of the A/C.
