AnswerIt doesn't escape because of the gravitational force of the gas.

It's hard for us to think of something like 'air' as being physical matter, not completely unlike iron or gold. Gas is physical matter, and not only does it behave like matter in a gravitational field, it has gravity. If you have enough gas all in one place, you have a lot of gravity.
A gas giant has much stronger gravity to contain those gasses. Additionally, the gas giants in our solar system are much farther from the sun than Mercury and therefore colder. This gives the gas less energy with which to escape. We have found gas giants in other solar systems orbiting very close to their stars. The broiled atmospheres of those planets are escaping and will take several million years to leave their planets completely.
