Of course they do. Jelly donuts would be very messy with a large hole in the middle of it.

Here in Canada besides the regular doughnut with the hole in the center and the jelly filled/sugar coated treat we have what is called a fritter. These are approximately hand sized irregular shaped, fried cakes with various fruits like apples or blueberries blended into the dough and lightly glazed. These are very popular with a large double double coffee at the local Tim Horton's.

Out of sheer frustration, and probably out of hunger, he impaled his cake over one of the spokes of the ship's wheel, thereby creating a finger hold with which to grip the cake. Quite pleased with his ingenuity, Mr. Gregory ordered the galley's cook to fry the cakes in that manner henceforth.

The hole is poked out of the donut before it is fried. So usually that bit of batter returns to the bowl and incorporated with the rest of the batter to make more donuts. In some cases the "holes" are fried up into little round ball-shaped donuts called "donut holes."

It's the evolution of the donut, the first donuts don't have holes, but its pioneers realized that if they do put a hole in the donut, it would cook faster and more evenly...
