diarrhoea is watery because of the toxoids in the GASTROINTESTINAL TRACT which cannot be reabsorbed hance water comes out in the lumen giving watery appearance to diarrhoea

This mainly due to what is called osmotic diarrhea, in which the lumen of the intestine will contain an osmotic substance that will drag all the water from the cell to the lumen, e,g lactose intolerance disease, cholera,..etc.
