Hydrogen is one of many elements whose atoms do not follow the octet rule. During covalent bonding, hydrogen defies the octet rule because it can only fill its first energy level with two electrons.

The octet rule has an exception for hydrogen and helium, because they contain only s electrons and a single electron shell that can not contain more than two electrons. These two elements therefore follow a "duet" rule instead of the usual octet rule. Also, since helium already has its duet in a single atom, it does not react with anything else as far as I know.

The first atomic electron shell, "s", supports only two electrons. This shell gets filled when traversing the periodic table after only the first two elements, Hydrogen and Helium. Many of the rest of the elements in the first part of the Periodic Table are then dealing with the next "p" shell, which supports up to 8 electrons.

"Atoms prefer to bond in a way to have their lowest unfilled electron shell filled, and most atoms have a shell the supports 8 electrons", would be a better re-statement of the octet rule. Since Helium doesn't really participate in chemical bonding and Hydrogen is just one element that has very simple, "trivial" chemistry, wanting always to share one more electron with a single partner, Hydrogen and Helium are not included in the octet rule.

each bond represents two electrons, there can only be so many bonds based on the number of valence electrons present.

I presume you mean why it doesn't follow carbon in the periodic table. This is because the table is a list in order of proton number. Hydrogen has one proton and carbon has 6.

Hydrogen contains only one valence electron(which it may lose or gain another electron) to achieve stability. hence it is odd one out in periodic table.

a stable octet is also known as a full outer shell. it occurs when electrons are added or removed from an atom so the outtermost shell contains its maximum amount, funnily enough Helium is included because is has a full outer shell as opposed to the direct meaning of a full octet. the term full octet refers to the outtermost shell being complete, however a direct definition means the outtermost shell containing EIGHT electrons, which simply isn't possible for something like Helium or Hydrogen. in which case, the full octet of either Helium or Hydrogen is two electrons- this would give Helium no charge at all, but would give Hydrogen a -1 charge, in a diatomic molecule two Hydrogen atoms would share their electrons between them: H=H <--Hydrogen / Helium --> He (would not donate or adopt electrons) more interstingly is the FORMS of Hydrogen. there are three: Hydrogen, deuterium and tritium.
