Because it gives quick energy for a short time... however it is not good because this fermentation is producing alcohol as a by product that is breaking down your muscles that's why its good to breath regularly.

The reason lactic acid is produced is because there is no oxygen available. In Aerobic respiration you need oxygen as the final electron acceptor in the electron transport chainwithout it the only respiration reaction that can still take place is the production pyruvic acid (a 3 carbon chain) from glucose. This is what happens in Anaerobic respiration, the build up of pyruvic acid in the cell would eventually cause glycolysis to stop so instead the pyruvic acid is converted by enzymes into lactic acid.

When oxygen becomes available again extra is needed to fist turn the lactic acid into pyruvic acid and then for aerobic respiration to continue.

An example of how this works: When you exercise oxygen is used up much more quickly than when resting (for many reasons like ATP requirement etc). Because there is no or a lack of oxygen available the cells begin aerobically respiring and lactic acid is produced. After you finish exercising you might notice you continue breathing faster than normal for a while this is because your body needs extra oxygen to turn the lactic acid back into pyruvic acid before it continues aerobic respiration.

...And a slightly more direct answer: The cells can't wait for oxygen because they continuously respire (or you'd probably die!) because you need one of the products - ATP. Although anaerobic respiration (just glycolysis) doesn't produce much ATP, it's better than nothing and you still get the rest of the ATP from the pyruvic acid when oxygen is available again.

in glycolysis nadh is made , in order to continue with glycolysis you need more nad, in acid fermentation nadh is recycled back to nad
