Im guessing it is used to help the cereal rise when being cooked, also to bring out the sweetnesss in the cereal. Salt is commonly used to bring sweet out of things.

Alot of cereals say 'low n fat' or 'fat free' this is deceiving the consumer. Sugar should be limited and gives us only energy which will not last very long, like a short term fix. A cereal should be low in sugar (5g or less per 100g). If a cereal is high in sugar it will be 22.5g or more sugar per 100g, we will not benefit from these cereals. Bran flakes and other low sugar cereals such as weetabix (which is also low in salt and fat) are a better choice, obviously the chocolate and golden syrup weetabix will affect the quality, they will have more sugar in them. Weetabix will release energy slowly to keep you fuller for longer.
