It is because You are not taking him outside as often as you think you are. Or...your giving your dog too much food and letting the food just sit out. Set a time where you feed your dog. two or three times a day is fine. Your Dog will poop when he cant hold it any longer. So take him outside very often until he goes poop.

Sounds like your dog is going through separation anxiety, the best way to controll this would be to crate train the dog, and make sure the have things to do while you are out.
Older dog going in crate?
Try to introduce him to the crate. If it is a house dog that is used to being free they may not like it. If not there shouldn't be a problem. It may upset the older dog.
