Having played and coached, I prefer leather. It's more breathable and comfortable in general. Most leather shoes today don't take more than a few training sessions to break-in. I've also seen players get a lot more blisters from microfiber/synthetic shoes.

Some differences between metal and plastic cleats are that metal ones may be more expensive they offer more traction of turf grass. Similarly, metal cleats are rigid while plastic ones can bend. Plastic cleats may be better for younger players and metal cleats are more suitable for older or adult Baseball players.

Metal is better because metal lasts longer and provides better traction. Safety is the only drawback. Fielders can get hurt when a runner slides into base with metal cleats. It will also do a lot of damage getting stepped on by someone wearing metal cleats. The only reason to use plastic is for artificial turf or because the rules forbid metal.
