Most cooking in castles was done outdoors if possible. They did not have chimneys in most castles and had to vent the smoke and fumes. An alternative used in bad weather was to cook in a kitchen that would be in a separate building in the ward or courtyard. Another alternative was to have a kitchen or kitchens in the keep or donjon, but this was difficult to do, again because of smoke and fumes.

Most cooking was done outdoors or in a separate building with large openings to vent smoke, because most castles did not have chimneys, and the fumes from the fire had to be vented through openings in the walls or roof. So if a castle had only one kitchen, it was probably either outdoors or in a specially built building with very large open windows in the ward.

Some castles and large houses had multiple kitchens, each for preparing a different sort of food. Baking would be done in one kitchen, often with the oven outdoors or next to a wall. Soups and sauces were cooked in a different kitchen, and roasts of meat cooked in another. If the kitchen was not outdoors, it was very likely in a basement, located next to a wall that could have openings to let smoke out, in a wing of a building that was a single story tall, with a hole in the roof, or in a small separate building.
