The check engine light will be on due to the empty catalytic converters not being efficient. On 96 and up vehicles the computer monitors the efficiency of the converters. Not to mention "gutting" a converter is illegal.

Because that is how they are made to run. They were added to cars to cut smog emissions and meet federal/state standards. Lead ruins the catalyst in the converter.
Most cars won't even run is the converter is clogged. Clogged converters can get very hot, maybe even start fires.
3. In the exhaust manifold on both sides of the motor has one built into it. The "left" and the "right". The 3rd is the plain run of the mill, everyones got one right before the muffler catalytic converter.
