Yes they could, but you should be aware that Mexican public schools teach their classes in Spanish. You probably have to (and certainly would be capable to) send your kids to a private school, as some of them teach their classes in English.

Yes you can. The Irving public library offers classes in both english and spanish. You must be at least 17 and officially withdrawn from your last school. At the age of 16 you may attend classes however you must be court ordered. There is one test site in Dallas, Texas at Mountain View College.
I don't know all of them.. And these are only the ones i can think of now. Calculus, Trig, Gym, Biology, Spanish, English
