They help improve the sensitivity of your skin at your fingers and improve grip, but you don't need to have fingerprints to feel an object. The rest of your body doesn't have fingerprint-like patterns but you can still feel things. But if you burn your fingers so badly that your fingerprints are gone, I would think that your nerves would be so damaged that you wouldn't be able to feel anything (I don't know if this would be permanent though).
