We need various molecules from the food we eat. We need amino acids to build protein. We need carbohydrates for energy. We also use fat for energy, but it is more important for the vitamins it can carry. We also need various micronutrients like vitamins, minerals, and electrolytes. An apple needs to get a lot smaller if it is going to fit into your arteries. So, we break it down. First we break it down mechanically by chewing the food and mashing it in the stomach. Then we break it down chemically into the parts we need. Some parts are easy to digest, like the cooked starches in pasta; those enter the blood near the start of the small intestine. Some are harder to digest and enter the blood later in the small intestine or get fermented and then absorbed in the large intestine. They all flow to the liver where they are released as needed.

So that we can get nutrients from it; the digestive system is where nutrients are absorbed by the body from food. It's kind of the whole point of eating.
