Black tea is produced by gathering the leaves and buds, then rolling or crushing them and allowing them to oxidize, turning them black. Green tea, on the other hand, is heated, by steaming or pan-firing, after gathering, in order to stop the enzymes that lead to oxidation. This preserves the green color of the leaf.
Black tea and green tea are both quite diverse. However, black tea tends to be darker in color when brewed, and has an earthy and sometimes floral aroma. Green tea tends to have a more grassy or vegetal aroma. Black tea is usually best brewed with boiling water, whereas green tea is best brewed with water that has been cooled slightly below boiling.
