The whole concept on Online Education is that you don't have to go to the campus daily or anytime in your life, so even if you get the admission in a UAE based online university, that doesn't qualify you for a visa there. I think the better option would be to contact a travel agent and get a visa through proper paper work.
I have been to UAE and they are pretty sensitive about their Immigration laws and policies. Make sure that you don't do something stupid which they see as a crime, or you might face some heavy charges in Arabic.
